Christine Manfield spent five years visiting the kitchens of India to collect heirloom recipes for her book Tasting India. The recipes are so authentic that India Today has called for it to be a mandatory wedding gift for newly married Indian couples. She gave us her three favourites: Ladakhi chicken curry, sweet and sour tomatoes, and spicy scrambled eggs with tomato.
